au pair stealing

hi, we are at our wits end.
over the last while we have noticed things going missing, mostly food. now over the last couple of weeks our childminder has been stealing small change from my husbands wallet. a few times just before going to bed we would both count whats there and the following morning some of it would be gone. there is no one else around. the kids are to small. we been advised by a few people not to film her ourselves or approach her. we know it's her but have no solid proof. we didn't get her from an agency so it is just her and us.
